Princess Beef began in 1999 with a cow named Princess. Raised by Cynthia and the Allen Ranch in Crawford, Colorado,
it was with her and her calves that the idea of selling homegrown, range finished beef was created.

  • Range finished, healthy lean beef raised where caring for and continually improving the environment are primary concerns.

  • Beef grown on organic pastures where NO insecticides, herbicides or toxic-chemical fertilizers are employed.

  • Meat produced without antibiotics or hormones, never confined in a feedlot, and never grain fattened.

  • Raised predator friendly; no mountain lions or coyotes killed to produce Princess Beef.

Cost

The goal of Princess Beef is to give the consumer a consistently priced, superior product unrelated to the up and downs of the cattle market. At the same time, Princess Beef would like to try and make a more profitable business by cutting out the large feedlots and butcher plants that control the beef industry today.

When you reserve your meat, you are actually reserving a live animal. In order to keep the price low for you and to give me the opportunity to choose where I want the beef to be processed, this is the only way I can sell it. I am giving the butchering business to the local, small business owners.

Legally, you are buying a live animal and I am having it processed for you. The cost is $3.00 hanging weight and the butchering is included in that price. The average price of a split quarter is $410. A $100 deposit is required to reserve meat.

Quantity

Princess Beef is sold in whole, half or split quarters. (A split quarter is divided between the front and back of the carcass.)

I figure out the price of the meat by hanging weight. Hanging weight is the carcass weight before being butchered into cuts.

I sell mostly split quarters. Hanging weight averages 137 pounds. Actual pounds of meat after being packaged averages 75 pounds. (For comparing prices, the meat comes to around $5.50 a pound after being cut and wrapped.)

The selection of cuts varies a bit depending on the butcher, but in general, for a split quarter wrapped for two people, you will receive: Sirloin Steaks, Filet Mignon, New York Strip, Rib Eyes, Round Steak, Chuck Roasts, Pot Roasts, Rump Roasts and Hamburger.

I have the steaks cut 1 1/2 inches thick and the roasts cut into 3–5 pounds.

Freezers

If you need to purchase a freezer before your beef is ready, keep in mind that a quarter of beef will fit in a five (5) cubic foot freezer.

I did some research and found that one could purchase a new five (5) cubic foot freezer for as low as $190.00 at Sears.

Delivery

Remember, you are reserving a live animal. Once you have reserved it and I have processed it for you, I don’t have the capacity to hold it in a freezer.

The cost of delivery outside of Delta County is 40 cents per mile, roundtrip, per pickup load. The more people I can deliver to at one place, the less it will be for each delivery. I would be happy to meet customers part way to reduce delivery charges. Pick your meat up at the ranch and there is NO delivery charge.
